Egg Stuff

Ok so here’s the deal. Egg stuff is a dish where you use what you got in the fridge and hopefully you never make it exactly the same way twice. You have carrots? Amazing, we’ll use em. Sun dried tomatoes? Wow... you actually have sun dried tomatoes in your pantry? You’re obviously a bit of an elitist but who cares?! I’m not judging! Throw em in!

What you will need…

The important first things are: Turn on your music and decide this is going to be a fun endeavour because you are a beautiful human and you deserve some fun in your life, damnit.

Chop your garlic and slice your onion, have your veggies ready

Take your two tortillas and tear them apart into pieces about the size of a quarter. (This is my favorite part, pretend they’re anyone who’s ever doubted you.)

Put olive oil in the skillet on low-medium heat - Add onions to the olive oil - Crack eggs in your bowl and whisk those bad boys with a fork, or an actual whisk cause you’re an elitist who owns a whisk and sun dried tomatoes.

Next add your seasonings in the bowl of whisked eggs.

Just a little touch of this, a little touch of that, do what feels good. Pretend you’re Julia Child while you’re doing it and it should all work out alright. Or a sassy jazz percussionist. Either one of those will yield interesting results and THAT is what we’re after.

Next add the garlic to the olive oil and make sure you got a light sizzle sizzle goin on. If not turn your heat up a smidge - Stir the garlic in then add tortilla - Cover the skillet with the lid. Leave it for the amount of time it takes you to do a soul train dance solo.

But make it quick... no more than a minute and a half, tops. Pelvic thrusts then figure eights with your hips would be more than acceptable and highly recommended.

Next add your veggies, stir em around, add some seasonings of your choice. Shake to the beat of whatever song is up on the playlist and then cover that sucka up with the lid ITS TIME FOR ANOTHER DANCE SOLO.

But I want passion in this one. I say you let yourself go for a good 2-5 minutes.

Now it’s go time baby.

Take that lid off and add those perfectly whisked eggs to the skillet. Turn the heat up a smidge and stir everything so it all gets mixed in real good. Cover it for another minute or two and stir it around until it looks like something you would want to eat.

Voila baby! You got egg stuff!

My dad used to serve it with cheddar cheese and sour cream on top but that’s a lot for my gastric system at this time in life.

I would maybe add Parmesan if I had it...

I’d also recommend a nice salsa, maybe some sliced up avocados to put on top and a little cilantro if you’re feeling fancy.

 If I was feeling adventurous that day I’d take a little lime wedge and squeeze it over my portion before eating.. especially if there’s avocado and Parmesan...

But that’s it!
